Pumpkin Pecan Pie Bars

Pumpkin Pecan Pie Bars

These Delicious Pumpkin Pecan Pie Bars have all the Great flavors of Pumpkin Pie with a subtle Pecan Pie Twist. The Best of 2 Classic Pies without all the fuss!

Crust Bake Time (350 Degrees) 15 minutes
Bars Bake Time (350 Degrees) 30 minutes
Total Time 45 minutes

Ingredients

PECAN CRUST INGREDIENTS

  • 2 Cups Flour
  • 1 Cup Brown Sugar
  • 3/4 Cup Butter (1 1/2 Sticks) (cold & coarsely chopped)
  • 1 Cup Pecans (finely chopped)
  • 1/2 Cup Water

CRUMBLY TOPPING INGREDIENTS

  • 1 1/2 Cups Reserved Pecan Crust Mixture
  • 1/2 Cup Oatmeal (Old Fashioned)
  • 1/2 Cup Pecans
  • 1/4 Cup Brown Sugar
  • 2 Tbl Butter (melted)

PUMPKIN PECAN PIE FILLING

  • 1 (15 oz) Can Pumpkin Puree (Unsweetened)
  • 1 (14 oz) Can Sweetened Condensed Milk
  • 2 Eggs (lightly beaten)
  • 1 Tbl Pumpkin Pie Spice
  • 2 tsp Vanilla
  • 1/8 tsp Salt

Instructions

    1. Combine the following Pecan Crust Ingredients (Flour, Brown Sugar & Butter) into a bowl and cut the Butter until crumbles form.
    2. Stir in Pecans then Water to create a Crumbly Mixture. Set aside 1 1/2 Cups of Pecan Crust Mixture for later using as a Topping.
    3. Press the remainder of Pecan Crust Mixture into a 9x13 pan.
    4. Bake the prepared Pecan Crust at 350 Degrees for 15-20 min or until edges are golden brown.
    5. Cool the Pecan Crust on a cooling rack while preparing remainder of recipe.
    6. Create the Crumbly Topping by combining 1 1/2 Cups of the Reserved Pecan Crust Mixture, Oatmeal, Pecans, Brown Sugar & Butter in a Bowl and mix; set aside for later.
    7. In a Stand Mixer, beat the Pumpkin Pecan Pie Filling Ingredients (Pumpkin Puree, Sweetened Condensed Milk, Eggs, Pumpkin Pie Spice, Vanilla & Salt) until Smooth. (the Flex Edge Attachment works well in a KitchenAid Stand Mixer for this)
    8. Pour the Prepared Pumpkin Pecan Pie Bar Mixture over the cooled Pecan Crust & Sprinkle reserved Crumbly Topping over the top.
    9. Bake the Pumpkin Pecan Pie Bars at 350 Degrees for 30-40 min or until golden brown.
    10. Cool the bars in the pan on a cooling rack.
    11. Cut the Pumpkin Pecan Pie Bars to desired size & Enjoy!

Notes

  • The Pumpkin Pecan Pie Bars store in an airtight container in the refrigerator for about 3 days. The Topping may soften with Refrigeration.
