Today we will be making a Truly Delicious Rhubarb Pudding Cake. This Good, Old-Fashioned Recipe makes a Quick & Easy Baked Treat with Rhubarb. Rhubarb Pudding Cake works well for Brunch, Dessert or for a Sweet Way to use up some items in the freezer/from the garden! Plus, it’s fun to prepare! As you’ll seen in the Recipe Card & Video below, a unique technique is used when making this Rhubarb Pudding Cake! You’ll have a Crispy Sugar Topping, Sweet & Tart Pudding Sauce and Cake – what a combination!

You can use Rhubarb Fresh from the garden or Frozen for this Recipe!


Just make sure you allow the Frozen Rhubarb to thaw overnight in the refrigerator prior to using in this recipe.

Truly Delicious Rhubarb Pudding Cake. This Good, Old-Fashioned Recipe makes a Quick & Easy Baked Treat with Rhubarb!

Prep Time 5 minutes
Bake Time (350 Degrees) 45 minutes
Total Time 50 minutes

Ingredients

Rhubarb Pudding Cake Batter Ingredients

  • 2 Cups Rhubarb (chopped)
  • 1 Cup Flour
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 3 Tbl Butter (melted)
  • 1/2 Milk
  • 1/2 tsp Vanilla
  • 1/2 tsp Almond Extract

Topping Ingredients

  • 1 Cup Sugar (*see Notes below)
  • 1 Tbl Corn Starch
  • 2/3 Cup Water (boiling)

Instructions

    1. Pour Rhubarb into an 8"x8" Glass Baking Dish or 2 Quart Glass Baking Dish.
    2. In a Mixing Bowl, combine the Rhubarb Pudding Cake Batter Ingredients (Flour, Sugar, Brown Sugar, Baking Powder, Salt, Butter, Milk, Vanilla & Almond Extract) and stir until well combined.
    3. Spread the prepared Rhubarb Pudding Cake Batter over the Rhubarb in the Baking Pan.
    4. Combine Topping Ingredients (Sugar & Corn Starch) and mix until combined.
    5. Sprinkle the Sugar Corn Starch Mixture over the Rhubarb Pudding Cake Batter, creating a nice sugar layer on top!
    6. Now Pour the Boiling Water over the Sugar Corn Starch Topping; this will make a crispy crust topping later!
    7. Bake the Homemade Rhubarb Pudding Cake at 350 Degrees for about 45 min or until the Topping is Golden Brown and the Rhubarb Pudding Cake Sauce is thick and Bubbly around the edges.
    8. Allow the Homemade Rhubarb Pudding Cake to Cool until set, about 1 hour.
    9. Enjoy this Delicious Sweet Treat as is, with Vanilla Ice Cream or a Dollop of Homemade Whipped Cream!

Notes

  • If you prefer a little less sweet Rhubarb Pudding Cake, use 3/4 Cup in the Topping.
  • You can use Fresh or Frozen Rhubarb for this Recipe! Just make sure you allow the Frozen Rhubarb to thaw overnight in the refrigerator prior to adding to this recipe.
