You can adjust the thickness of this Strawberry Rhubarb Torte/Crumb Pie/Crisp, by choosing the Baking Dish Size. Want a Deep & Delicious Torte – Use an 8″x8″ Baking Dish. You can use Strawberries & Rhubarb Fresh from the garden or Frozen for this Recipe!
Just make sure you allow the Frozen Strawberries & Rhubarb to thaw overnight in the refrigerator.
Strawberry Rhubarb Torte
This Family Recipe of Strawberry Rhubarb Torte is So Easy to make and works well for Brunch, Dessert or for a Sweet Treat!
Ingredients
CRUST & TOPPING INGREDIENTS
- 2 Cups Flour
- 1 Cup Brown Sugar
- 3/4 Cup Butter (1 1/2 Sticks) (softened to room temp)
STRAWBERRY RHUBARB FILLING INGREDIENTS
- 2 Cups Sugar
- 4 Tbs Cornstarch
- 2 Cups Water
- 1 Tbl Butter
- 1 Tbl Vanilla
- 4 Cups Rhubarb (cut into desired size pieces)
- 1 Small Package of Strawberry Gelatin (3 oz Package)
- 1/2 Cup Strawberries (chopped to desired size pieces) [Optional]
Instructions
- Combine the Crust & Topping ingredients (Flour, Sugar & Butter) into Mixing Bowl or the Bowl of a Stand Mixer. Cream together the Butter & Sugar Mixture with a Pastry Cutter if using a Mixing Bowl or with a Flex Edge Paddle Attachment if using a Stand Mixer until a Fluffy, Aerated Butter/Sugar results.
- Reserve 1 Cup of the Crust & Topping Mixture and set aside for use later.
- Pour the remainder of the Crust & Topping Mixture into an 8"x8" Glass Baking Dish or 2 Quart Glass Baking Dish and press to create a smooth surfaced crust. Set aside.
- Into a Saucepan or Dutch Oven, combine the Strawberry Rhubarb Filling Ingredients (Sugar, Cornstarch & Water) stirring well.
- Bring the Strawberry Rhubarb Filling Ingredients up to a Boil & Cook until it becomes Clear, then remove from Heat.
- Add the remainder of the Strawberry Rhubarb Filling Ingredients (Butter, Vanilla, Rhubarb, Strawberry Gelatin & Strawberries (if using)) and stir well until well combined.
- Now pour the prepared Strawberry Rhubarb Filling over the Crust in the Baking Pan.
- Sprinkle the reserved Crust & Topping Mixture over the Strawberry Rhubarb Filling, creating your Strawberry Rhubarb Torte!
- Bake the Homemade Strawberry Rhubarb Torte at 350 Degrees for about 45 min or until the Torte Topping is Golden Brown and the Strawberry Rhubarb Sauce is thick and Bubbly around the edges.
- Allow the Homemade Strawberry Rhubarb Torte to Cool until set, about 1 hour.
- Enjoy this Delicious Sweet Treat as is, with Vanilla Ice Cream or a Dollop of Homemade Whipped Cream!
Notes
- You can use Fresh or Frozen Strawberries & Rhubarb for this Recipe! Or no Strawberries at all! Just make sure you allow the Frozen ingredients to thaw overnight in the refrigerator.
This Simply Delicious combination of Strawberries & Rhubarb can be made with or without strawberry pieces. The Filling Base has a nice strawberry flavor without needing added berries – It’s just even better with them!
