Banana Oatmeal Cookies

These Banana Oatmeal Cookies are SO GOOD! Like Banana Bread - But Better 🙂 Crispy Edges with a Soft, Chewy & Chocolatey inside...Mmm! If you bake these cookies for a Sweet Treat, you'll see just how fast they get gobbled up out of the Cookie Jar!
Ingredients
- 1 ½ Cups Flour (All-Purpose)
- 1 Cup Sugar
- 1 tsp Salt
- ½ tsp Baking Soda
- ½ tsp Cinnamon
- ½ tsp Nutmeg
- ¾ Cup Butter (1 ½ Sticks) (room temp, softened)
- 1 Egg (room temp)
- 1 Cup Banana (mashed) (@ 2 Bananas)
- 1 ¾ Cups Oatmeal (Quick Cook)
- 1 Cup Chocolate Chips
- ½ Cup Pecans or Walnuts (chopped) [Optional]
Instructions
- Combine Dry Ingredients (Flour, Sugar, Salt, Baking Soda, Cinnamon & Nutmeg) into a Mixing Bowl for a Stand Mixer (or large mixing bowl if hand mixing). Stir to combine ingredients.
- With the Paddle or Flex Edge Attachment on the Stand Mixer (or Pastry Cutter if hand mixing) mix the Butter until a crumbly appearance results.
- Add the Egg, Banana & Oatmeal and mix until well incorporated.
- Stir in the Chocolate Chips (& Pecans/Walnuts if using) until well distributed into the Banana Oatmeal Cookie Batter.
- Scoop the Banana Oatmeal Cookie Batter (in desired size) onto a Parchment Paper lined Baking Sheet.
- Bake the Banana Oatmeal Cookies at 375 Degrees for about 15 min or until golden brown on the edges.
- Allow the Banana Oatmeal Cookies to cool, on the Baking Sheet, on a Cooling Rack about 5 minutes.
- Then Remove the Cookies from the Baking Sheet and continue to cool the Banana Oatmeal Cookies directly on the Cooling Rack (if your self-control allows). (*see Notes below)

- These Banana Oatmeal Cookies Store nicely in a cookie jar once completely cooled.
