Homemade Spaghetti Sauce (Water Bath Canned in the Presto Digital Canner)

Homemade Spaghetti Sauce Recipe

Easily Peel & Prepare Tomatoes for your Tomato Sauce Base and cook a Tasty Spaghetti Sauce! Then, we'll use the Presto Digital Pressure Canner in the Boiling Water Mode (Water Bath Canning) to process our jars of Spaghetti Sauce! It is so Simple to do!

Cook Time 4 hours
Canning Processing Time (min) 35 minutes
Total Time 5 hours

Ingredients

  • 6-8 Cups Tomatoes (Cored, Peeled & Mashed)
  • 1/4 Cup Lemon Juice
  • 1/4 Cup Sugar
  • 1 Tbl Garlic (minced)
  • 1 tsp Garlic Powder
  • 3 tsp Oregano
  • 1 tsp Onion Powder
  • 2 tsp Salt (Canning)
  • 1 tsp Black Pepper
  • 1 tsp Basil

Instructions

  1. Prepare Tomatoes (*see Notes below) and place into a Nesco Roaster Oven or Large Stockpot.
  2. Add remaining ingredients to the Prepared Tomatoes and stir until well combined.
  3. Cover & bring Tomato Mixture slowly to a boil.
  4. Continue to cook at 250-300 Degrees until desired thickness. This may take @ 2 hours; checking every 30 min & stirring frequently to prevent sticking or scorching.
  5. Use Immersion Blender (or Food Processor/Blender in batches) to create a smooth sauce of desired consistency.
  6. Prepare the Presto Digital Canner. Add water to bottom line (amount is as recommended by manufacturer of canner) & canning rack/tray to bottom of Presto Digital Canner Liner Pan.
  7. Plug in Presto Digital Canner. Select [Boiling Water Can] (Water Bath Canning) option on right of screen by pressing the Control Knob.
  8. Turn Control Knob to select Processing Time for recipe; 35 min is the minimum processing time for Spaghetti Sauce (add time as necessary based on your altitude). Press Play Button [Insert Jars] will light up on screen.
  9. Fill Pint Mason Jars, that you will be using for Canning, Half Full of Water and place Jars into canner for warming.
  10. Remove Regulator from the canner cover and place aside until later. Place cover on canner & move to [Lock] position. Lower sensor arm & turn green knob to lock in place. Press Play Button [Warm] lights up on the screen and the canner will warm the jars you will be using for canning.
  11. The canner will beep twice when completed and [Fill Jars] will light up on screen. Unlock the cover & sensor arm, remove the jars and pour the water into the canner liner pan for use in Water Boiling Canning Mode.
  12. Then add the Hot Homemade Spaghetti Sauce to each warmed Pint Jar, leaving a 1/2" headspace in the jar.
  13. Use Bubble Removal Tool (or a chopstick works well too) to remove any bubbles by sliding along the sides and middle of the Homemade Spaghetti Sauce inside each jar.
  14. Wipe the rims & side threads of the jars and place a lid/ring on each jar, finger tightening the ring.
  15. Place jars into canner for processing, add more Boiling Water as necessary over the jars so that the water level is 1" above the tops of the jars.
  16. Place cover on canner & move to [Lock] position. Lower sensor arm & turn green knob to lock in place. Press Play Button [Heat] lights up on the screen and the canner will begin heating until the Boiling Water Canning Temperature is reached.
  17. Once the proper temperature is reached, the Presto Digital Canner will beep twice and [Canning] will light up on the screen. The originally set timer will begin to count down and the canner is now processing the jars.
  18. Once processing is complete, the canner will beep 4 times and [Cool] will light up on the screen and a 5 min timer will begin to count down.
  19. Unlock the Cover, lift the Sensor Arm and carefully Remove the Cover.
  20. When the cool down timer is completed, the canner beeps 10 times and [Done] lights up on the screen.
  21. Press & hold the X button for 3 seconds; the screen will reset, and the processing is complete!
  22. Remove the Jars of Homemade Spaghetti Sauce and Transfer them to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal! In 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
  23. If any jars did not seal, place them in the refrigerator for enjoying now!
  24. Enjoy your Homemade Spaghetti Sauce throughout the year with your favorite dishes, appetizers & meals!

Notes

Tomatoes can be prepared for this recipe in a number of ways:

  1. Blanch, Core, Peel & Mash
  2. Using a Food Mill (place Cored & Quartered Tomatoes through a Manual, Sauce Master or KitchenAid Stand Mixer Food Mill Attachment)
  3. Frozen Tomatoes that have thawed in the Refrigerator overnight can easily be peeled by simply hand and then mashed in a bowl!

You can also use a Cooktop Water Bath Canner for this project, simply process for 35 min (minimum processing time for Spaghetti Sauce) adding time as necessary based on your altitude.


Tomatoes are SO easy to peel once thawed after being frozen & Prepping them for the freezer is a breeze as well! Simply place clean, ripe tomatoes into a freezer safe bag and store in the freezer until ready to do your food preservation project. When i’m going to do some tomato based canning, I then take the bag out of the freezer the night before & thaw the tomatoes in the refrigerator. Viola! Soft & easy to peel tomatoes are ready for your recipe!


You can Remove the Tomato Cores prior to Freezing as well to help make your Canning Day even more efficient!
