Today we will be making some Homemade Oatmeal Granola Bars. These Tasty Snacks would be a yummy addition to your Breakfast, Packed into Lunches or College Care Packages, as well as a nice option to quickly Grab when you’re On the Go! Plus, with this being a No Egg Recipe, even if someone has an Egg Allergy or Dietary Restriction, they can still enjoy this Soft & Chewy Oatmeal Granola Bar!

Oatmeal Granola Bars (No Egg Recipe)

Homemade Oatmeal Granola Bars (No Egg Recipe)

Soft & Chewy, these Oatmeal Granola Bars make a Great Addition to your Breakfast, Lunch, College Care Package or Healthy Snack when you're on the go! Plus, when made without eggs, as the recipe below, even those with allergies & dietary restrictions can enjoy these Tasty Treats!

Prep Time 10 minutes
Baking Time (350 Degrees) 25 minutes
Cooling Time 30 minutes
Total Time 1 hour 5 minutes

Ingredients

Flax Egg (Egg Substitute)

  • 2 Tbl Flax Seed (Ground)
  • 6 Tbl (1/8 Cup) Water

Oatmeal Granola Bars

  • 2 Cups Oatmeal (Old Fashioned)
  • 1 Cup Bananas (Peeled & Mashed) [@ 2 Bananas] (*see Notes below)
  • 3 Tbl Maple Syrup
  • 1 Tbl Chia Seeds
  • 1 tsp Cinnamon
  • ¼ tsp Ginger (ground)
  • ¼ tsp Nutmeg (ground)
  • ¼ tsp Salt
  • 1 tsp Vanilla

Instructions

  1. Combine the Flax Seed & Water, mix together and set aside @ 5 min. (This will create the Egg Substitute of a “Flax Egg” equal to 2 Eggs) (*see Notes below)
  2. Combine the Oatmeal Granola Bars ingredients into a Mixing Bowl & Stir until combined.
  3. Stir in the prepared Flax Egg Mixture until well incorporated.
  4. Pour the Oatmeal Granola Bars Mixture onto a Parchment Paper Lined Rimmed Baking Sheet.
  5. Spread & Press the Oatmeal Granola Bars Mixture until it is to the thickness Granola Bar you would like. (*see Notes below)
  6. Bake at 350 Degrees for 20-25 min or until Heated Through (Soft or Crunchy) & Golden Brown to your liking.
  7. Cool the Oatmeal Granola Bars on a Cooling Rack for about 30 min and place onto a cutting surface.
  8. Cut the Oatmeal Granola Bars into the Size & Shape you’d like and allow to cool completely before storing. (*see Notes below)
  9. Enjoy!

Notes

- Fresh or frozen Bananas can be used for this recipe. If using frozen, simply thaw the Bananas until they are soft enough to mash & use as above!

- You can Substitute the Flaxseed & Water for 2 Eggs if you would like to use Eggs in this recipe.

- This recipe is Kid-Friendly, so you can get the little ones into the kitchen with you and help Mix & later Smoosh the Oatmeal Granola Bars Mixture into the pan. Who doesn’t like doing that?! 🙂

- These Oatmeal Granola Bars store nicely in an air-tight container, at room temperature, for about 1 week.

If you do not wish to adjust for no eggs in this recipe,
simply use 2 eggs instead of the Flax Egg!
