CHEDDAR VEGETABLE CHOWDER | CREAMY SLOW COOKER CHEDDAR VEGGIE SOUP RECIPE

This Homemade Cheddar Vegetable Chowder is Easily Prepared in the Crock Pot or Instant Pot! Large pieces of Vegetables in a Rich & Creamy Soup Base (Chowder) make this a Delicious & Hard to Resist Meal that works great for Lunch or Dinner. Pair this Creamy & Hearty Soup with some Rustic or Crusty Bread to make a Complete Meal that is sure to please!
Ingredients
SOUP BASE INGREDIENTS
- 3 Tbl Butter
- 3 Tbl Flour
- 1/2 Cup Onion (diced)
- 1/2 tsp Salt
- 1/4 tsp Black Pepper (ground)
- 4 Cups Vegetable Broth or Stock
VEGETABLE INGREDIENTS
- 1 Cup Corn
- 1 Cup Carrots (chopped or julienned)
- 2 Cups Potatoes (peeled & diced)
- 1 Cup Broccoli (chopped to desired size pieces)
- 1 Cup Cauliflower (chopped to desired size pieces)
- 1 tsp Parsley (dried or chopped fresh)
FINISHING INGREDIENTS
- 1 Cup Heavy Cream
- 1 Cup Half & Half
- 1 Cup Shredded Cheddar Cheese
- 1 tsp Thyme (dried or chopped fresh)
- Cornstarch Slurry - 1 Tbl Cornstarch & 2-3 Tbl Water [Optional]
Instructions
- Prepare the Soup Base by first making a Roux; melt the Butter in a Dutch Oven or Saucepan, then add the Flour and stir to combine. Once the Butter & Flour Mixture has cooked for a few minutes, cooking off the raw flour taste, and creating a slightly golden Roux with a slightly nutty scent.
- Stir in the Onions, Salt & Pepper and cook the Onions until they are soft and slightly translucent.
- Pour in the Vegetable Broth/Stock and mix until well incorporated, creating the Soup Base.
- Into the Crock Pot / Slow Cooker / Instant Pot Liner Pot add the prepared Soup Base & Vegetable Ingredients (Corn, Carrots, Potatoes, Broccoli, Cauliflower & Parsley) and stir until well combined.
- Apply the Cover & Set the Crock Pot / Slow Cooker / Instant Pot [on Slow Cooker Mode] to cook the Vegetable Chowder for about 4 Hours on High or 6 Hours on Low, or until the Vegetables are softened & cooked through.
- Once the Vegetable Chowder has finished cooking, mix in the Finishing Ingredients (Heavy Cream, Half & Half, Cheddar Cheese & Thyme) [if using the Corn Starch Slurry, add it in now as well]. Stir well and apply the Cover & continue to cook on Low for about 30 min to create a Creamy & Delicious Cheddar Vegetable Chowder. Add Salt & Pepper to taste if needed.
- Garnish the Cheddar Vegetable Chowder with Shredded Cheddar & Enjoy!
- Pair this Cheddar Vegetable Chowder with some Rustic or Crusty Bread for a Tasty Meal!

- You can play around with the amounts & combination of Vegetables to suit your taste or to help use up Vegetables in the Refrigerator or Fresh Veggies from the Garden!
