Mini Cocktail Reubens Air Fryer Recipe

This Air Fryer Recipe of Mini Cocktail Reubens is a great way to use leftover corned beef or lunchmeat fresh from the deli, in a different way for a tasty snack!

Prep Time 5 minutes
Air Fryer Cook Time (370 Degrees, 5-10 Min) 5 minutes
Total Time 10 minutes

Ingredients

Amounts will Depend on How many Mini Cocktail Reubens you would like to make - this will yield about 10!

  • 1 Package Cocktail Rye Bread (Pumpernickel or Light Rye) (*see Notes below)
  • 1/4 Cup Thousand Island Dressing
  • 1 Cup Corned Beef (Cooked & Sliced Thin) (*see Notes below)
  • 1 Cup Sauerkraut (Drainged & Squeezed dry with paper towel)
  • 1 Cup Shredded Swiss Cheese

Instructions

  1. Add a dollop of Thousand Island Dressing onto a piece of Cocktail Rye and spread evenly over the bread.
  2. Place a Slice of Corned Beef, followed by some Sauerkraut & Shredded Swiss Cheese, to create a Mini Cocktail Reuben.
  3. Set the Prepared Mini Cocktail Reubens into the Air Fryer Basket or Tray.
  4. Continue to assemble the Mini Cocktail Reubens as above until you have reached the number you would like to prepare.
  5. Cook the Mini Cocktail Reubens in the Air Fryer at 370 Degrees 5-10 min or until the cheese is melted/golden brown and the Mini Cocktail Reubens have heated through. (Cook Temp & Time may vary between models of Air Fryers so experiment as necessary to reach your desired results)
  6. Place cooked Mini Cocktail Reubens on a Cooling Rack over a Baking Pan or Plate, between batches in the Air Fryer (if necessary), in order to help keep them nice and crispy.
  7. Enjoy these Mini Cocktail Reubens as is or garnished with a drizzle of Thousand Island Dressing!

Notes

  • Natural Pumpernickel Bread works well too, if cut into thirds or desired sized bread pieces. This bread is often already sliced nice & thin like the Cocktail Rye Bread.
  • You can use Freshly Prepared Corned Beef, Leftover Corned Beef or Corned Beef from the Deli for this Recipe!
