BBQ Pulled Pork Instant Pot Recipe

Pork Roast with a Sweet & Smoky Dry Rub set the stage for this Saucy Meal that makes a wonderful Lunch or Dinner. Add your favorite BBQ Sauce and Viola! You're next Busy Weeknight, Lazy Weekend, Game Day or Tailgate Entree is ready to go!

Prep Time 5 minutes
Instant Pot Cook Time (Hight Pressure) 1 hour
Natural Release Time (then Quick Release) 10 minutes
Total Time 1 hour 15 minutes

Ingredients

  • 1 12 oz Can Dr. Pepper Soda (or 1 1/2 Cups Water)
  • 1 Medium Onion (Sliced)
  • 1 3-4 Lb Pork Roast (Rib Roast works well)
  • 2 Tbl BBQ Dry Rub or Seasoning of Choice (Kinder's Hickory Molasses works well)
  • 16 oz BBQ Sauce

Instructions

  1. Place Trivet into Instant Pot Liner Pot followed by the Dr. Pepper Soda (or Water if using) and Sliced Onion.
  2. Apply Dry Rub of choice onto all sides of the Pork Roast and then place prepared Pork Roast onto the Sliced Onion in the Instant Pot.
  3. Apply the Instant Pot Lid, turn Pressure Valve to [Sealing] and press [Pressure Cook or Manual] Button to set the Instant Pot to [High] Pressure and set the timer for 60 min (1 hour).
  4. The Instant Pot will come up to pressure and cook the Pork Roast for 60 min. Once the cook time has finished, allow a Natural Release for 10 min.
  5. Once the Natural Release timer is finished, do a Quick Release by placing a Steam Diverter (if desired) to the Pressure Valve and turning it to [Vent] until all that Steam has released and the little Stem in back falls and is flush with the Instant Pot Lid.
  6. Remove Lid and place Pork Roast on a platter to rest.
  7. Press Cancel on the Instant Pot and discard the Cooking Liquid & Onions (reserving about ¼ Cup of Liquid), wash & dry the Instant Pot Liner Pot and place back into the Instant Pot.
  8. Shred the Pork Roast with 2 forks to desired size, set aside.
  9. Pour the Shredded Pork Roast into the Instant Pot Liner Pot and Stir in the BBQ Sauce until well incorporated. Adding Reserved Cooking Liquid if necessary to add more moisture to the BBQ Pulled Pork Mixture.
  10. Press [Keep Warm] and place Instant Pot Glass Lid onto Instant Pot, to help keep the BBQ Pulled Pork nice & warm until ready to serve.
  11. Enjoy on full size Hamburger Buns, Pretzel Buns, Hard Rolls or Slider Buns!
