Butternut Squash, Sausage & Wild Rice Soup

Butternut, Sausage & Wild Rice Soup Recipe

Butternut Squash Soup is the ultimate comfort food on a cold day or if you're in the mood for a thick hearty soup! When made in the Instant Pot, it is quick to put together as well. This Butternut Squash, Sausage & Wild Rice Soup has Savory and Slightly Sweet flavors that are sure to please!

Fresh Butternut Squash Cook Time (High Pressure/QR) 10 minutes
Wild Rice Cook Time (High Pressure/15 min NR): 25 minutes
Sausage & Soup Cook Time (Saute Mode) 45 minutes
Total Time 1 hour 20 minutes

Ingredients

Squash Ingredients

  • 1 Medium Butternut Squash (about 3-4 Lbs) [Seeded, Peeled & Cut into 1" Pieces]
  • 4 Cups Chicken or Vegetable Stock

Wild Rice Ingredients

  • 1 Cup Wild Rice
  • 2 Cups Chicken or Vegetable Stock

Sausage & Other Soup Ingredients

  • 1 Package Kielbasa or other Smoked Sausage (Andouille Sausage works well too)
  • 2 1/2 Cups Onion (Coarsely Chopped) (about 2 Medium Onions)
  • 2 Cups Corn (Fresh, Frozen or Canned & Drained)
  • 1/2 Cup Half & Half (Optional) (*see Notes below)
  • 1 tsp Salt (to taste)
  • 1/2 tsp Black Pepper (to taste)

Instructions

  1. If using Fresh Butternut Squash, Combine Squash ingredients above into Instant Pot Liner Pot and Cook 10 min [High Pressure] then Quick Release.
  2. Puree Butternut Squash in Instant Pot Liner Pot with Immersion Blender, once cooked, and set aside.
  3. If using Leftover Butternut Squash, Puree with 4 Cups of Chicken or Vegetable Stock to create a Soup Base, set aside.
  4. Combine Wild Rice Ingredients into Instant Pot Liner Pot, stir and Cook 25 min [High Pressure] then 15 min Natural Release. Set aside.
  5. Brown Sausage in Instant Pot Liner Pot on [Sauté] & [Normal] Mode until nicely caramelized. Add drizzle of Olive Oil or Avocado Oil if needed to prevent sticking.
  6. Remove Sausage, reserving its cooking fats in the Instant Pot Liner Pot and add the Onions. Cook Onions on [Sauté] & [Normal] Mode until nicely caramelized. Scrape the bottom of the Instant Pot Liner Pot with Spatula to Deglaze the Pot of the Sausage Cooking particles. Add drizzle of Olive Oil or Avocado Oil if needed to prevent sticking.
  7. Add Corn, Sausage & Butternut Squash Puree into the Instant Pot Liner Pot and Stir until well combined,
  8. Simmer on [Sauté] & [Less] Mode for 20 min. Stirring occasionally to prevent sticking and scorching.
  9. Stir in Wild Rice (Optional Half & Half and Additional Chicken/Vegetable Stock as noted in Notes below)
  10. Simmer on [Sauté] & [Normal] Mode for 10 min - so the flavors & ingredients can cook together and heat through.
  11. Add Salt & Pepper to Taste.
  12. Keep Soup Warm & Ready to eat on [Keep Warm] Mode.
  13. Enjoy!

Notes

  • If you prefer a thinner soup, you can also add 2-4 Cups of Chicken or Vegetable Stock at this point as well.
