Beef & Black Bean Enchiladas
Beef & Black Beans are a great combination for Enchiladas, especially when combined with some Onions & Cheese - Dinner is Served!
Ingredients
Enchilada Filling Ingredients
- 1 Onion (Coarsely Chopped)
- 1 Lb Ground Beef
- 1/4 Cup Taco Seasoning (or 1 Packet)
- 1 16oz Jar Black Beans (Drained) [or 1 Store-Bought Can]
Enchilada Shell
- 6-8 Flour Tortillas
Enchilada Topping Ingredients
- 1 16 oz Jar Enchilada Sauce [or 1 Store-Bought Jar/Can]
- 2 Cups Shredded Cheddar Cheese
Instructions
- Sauté the Onions in a Skillet until Soft & Translucent.
- Add the Ground Beef and Brown with the Onions until no longer pink.
- Sprinkle the Taco Seasoning over the Onion & Beef Mixture and stir until the seasoning is well incorporated.
- Stir in Black Beans and cook until heated through to create a Beef & Black Bean Filling.
- Spoon Beef & Black Bean Filling into Flour Tortillas, rolling them up and placing them Seam Side down into Baking Pan.
- Continue to fill Tortillas until the Filling is used up.
- Pour Enchilada Sauce over all the Prepared Beef & Bean Enchiladas then sprinkle with the Shredded Cheddar Cheese.
- Cover the Baking Pan with Aluminum Foil and Bake at 375 Degrees covered for 20 min,
- Then Uncover and Bake an additional 10 min, until the Cheese is Golden Brown, and the Sauce has Thickened on top or the Enchiladas.
- Allow the Beef & Bean Enchiladas to cool slightly before serving.
- Enjoy!
Notes
- Beef & Black Bean Enchiladas serve well with Lettuce, Salsa & Sour Cream
- Adding a Rice Dish makes a Complete Meal!
