Today we will be going over How to Make a Bold & Spicy Homemade BBQ Sauce! By taking fresh Roma Tomatoes and processing them to create a smooth tomato sauce. Then, with the addition of this combination of ingredients & seasonings, you end up with a Bold & Spicy BBQ Sauce that is great to use for recipes or to have as a condiment! This BBQ Sauce is then water bath canned so that it can be added to your pantry shelf!

Bold & Spicy BBQ Sauce | How to Can Homemade BBQ Sauce
The combination of flavors in this recipe & the slow cooking of the sauce results in a Bold & Spicy Homemade BBQ Sauce created from your Tomato Harvest!
Ingredients
- 4 Quarts of Tomato Sauce [10 Lbs or @ 40 Roma Tomatoes]
- 1 1/2 Cups Onion (Finely Minced) [@ 2 Medium Onions]
- 1/2 Cup Molasses
- 2 Cups Brown Sugar
- 2 Cups White Vinegar (5% Acidity)
- 1/2 Cup Worcestershire Sauce
- 1 Pint Candied Jalapenos (Cowboy Candy) [2 Cups]
- 1 tsp Black Pepper
- 1 tsp Chipotle Pepper
- 1 Tbl Mustard Powder
- 1 Tbl Garlic Powder
- 1 Tbl Smoked Paprika
- 1 Tbl Salt (Canning Salt)
- 1 tsp Liquid Smoke (Hickory Flavor)
Instructions
- Wash & prepare Roma Tomatoes in a Food Mill/Sauce Master/KitchenAid Food Strainer in order to remove skins & seeds, making 4 quarts of Tomato Sauce. Place into Nesco Roaster Oven or cooking pot on stove.
- Prepare Onion and add to Roaster Oven/Pot, stir to combine.
- Now add the Molasses, Brown Sugar, Vinegar, Worcestershire Sauce & Candied Jalapenos (Cowboy Candy). Stirring all ingredients until well combined.
- Next add the seasonings: Black Pepper, Chipotle Pepper, Mustard Powder, Garlic Powder, Smoked Paprika, Salt & Liquid Smoke. Stirring all ingredients until well combined.
- Turn Roaster Oven to 350 Degrees or Stovetop Pot to Medium High heat. Bring tomato mixture to a boil and continue to cook for about 30 minutes.
- Then use an immersion blender to create a smooth sauce like texture to the BBQ Sauce.
- Adjust the temperature on the Roaster oven or stove top & continue to cook until desired thickness. Stir occasionally to prevent burning or scorching.
- The cooking time will vary based on your preference of Bold & Spicy BBQ Sauce consistency. My preference, when using the Nesco Roaster Oven took 3 hours at 300 Degrees and 3 hours at 250 Degrees to reach desired thickness.
- Prior to the last 30 min of cooking, place a small amount of the Bold & Spicy BBQ Sauce onto a dish and chill in the refrigerator to help determine the thickness of the sauce once cooled.
- Add the Homemade Bold & Spicy BBQ Sauce to pint jars (or 1/2 pint jars), leaving a 1/2" headspace.
- Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
- Place jars into water bath canner for processing, making sure water covers the jars by an inch or two. The minimum processing time is 20 min; add time as necessary based on your altitude.
- Once processing is complete, let the jars sit in the water bath canner for about 5 minutes, then transfer to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
- After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
- If any jars did not seal, place them in the refrigerator for enjoying now!
