Apricot Oatmeal Cookies

Apricot Oatmeal Cookies Recipe

Apricot Oatmeal Cookies - these are truly delicious cookies with some Sweet & Fresh Flavors of Spring! There are little pops of sweetness in these Oatmeal Cookies with Apricot & White Chocolate; so Tasty! I hope you give this cookie recipe a try!

Prep Time 5 minutes
Refrigeration Time 30 minutes
Bake Time (350 Degrees) [10-15 min] 15 minutes
Total Time 50 minutes

Ingredients

  • 1 Cup (2 Sticks) Butter (softened)
  • 1/4 Cup Sugar
  • 1 Cup Brown Sugar
  • 2 Eggs (room temp)
  • 1 tsp Vanilla
  • 1 1/2 Cups Flour
  • 1 1/2 Cups Oat Fashioned Oats
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 Cup Vanilla or White Chocolate Chips
  • 1 1/2 Cups Dried Apricots (coarsely chopped)

Instructions

    1. In a Stand Mixer Bowl, Cream Butter & Sugars (Butter, Sugar & Brown Sugar) until light & fluffy.
    2. Beat in Eggs & Vanilla, 1 Egg at a time.
    3. In a small mixing bowl combine Flour, Old Fashioned Oats, Baking Soda & Salt.
    4. Mix the Flour Mixture, a little at a time, into the Butter Mixture until incorporated.
    5. Next Mix in the Vanilla/White Chocolate Chips & Apricots until distributed throughout the Cookie Dough.
    6. Cover and Place the Apricot Oatmeal Cookie dough in the Refrigerator about 30 min to chill.
    7. Scoop the Apricot Oatmeal Cookie dough onto Parchment Paper Lined Baking Sheets, about 2" apart.
    8. Bake the Apricot Oatmeal Cookies at 350 Degrees for 10-15 min or until the edges are slightly crispy and the center is still soft.
    9. Allow the Apricot Oatmeal Cookies to cool on a Cooling Rack.
    10. Enjoy these Delicious Spring Flavored Cookies with some Cold Milk or Hot Tea!

Notes

  • The Apricot Oatmeal Cookies store well in an air-tight container or cookie jar about a week.
