Zucchini "Pineapple" | How to Can Mock Pineapple

Homemade Zucchini Pineapple

By combining peeled & seeded zucchini with a pineapple canning syrup, you end up with a sweet tasting "pineapple" for your pantry shelf! Zucchini "Pineapple" (or Mock Pineapple) is a wonderfully easy & fun way to preserve Zucchini. You just might have to think twice that it is Zucchini!

Prep Time 10 minutes
Cook Time 20 minutes
Water Bath Canning Processing Time 15 minutes
Total Time 45 minutes

Ingredients

  • Zucchini (Peeled, Seeded & Cut into desired size and shape) - The More the Better!
  • 48 oz Pineapple Juice (Pure Juice, not from concentrate)
  • 1/2 Cup Lemon Juice
  • 3 Cups Sugar

Instructions

  1. Prepare Zucchini as above and set aside.
  2. To Prepare Canning Liquid, combine Pineapple Juice, Lemon Juice & Sugar and mix together in a pot. Bring up to a boil so that the sugar is dissolved.
  3. Add Zucchini pieces into the Canning Liquid and cook @ 20 minutes, until the Zucchini "Pineapple" pieces are warmed through and somewhat translucent.
  4. Place the Zucchini "Pineapple" pieces into pint jars, followed by the Canning Syrup, leaving a 1/2" headspace.
  5. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
  6. Place jars into water bath canner for processing, making sure water covers the jars by an inch or two. The minimum processing time is 15 min; add time as necessary based on your altitude.
  7. Once processing is complete, let the jars sit in the water bath canner for about 5 minutes, then transfer to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
  8. After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
  9. If any jars did not seal, place them in the refrigerator for enjoying now!

Notes

This Zucchini "Pineapple" can be used throughout the year for whatever you would use canned pineapple for! Hawaiian Pizza Toppings, Pineapple Upside Down Cake or Cupcakes; adding to Fruit Salad, Banana Split Sundaes or simply snacking alone or with cottage cheese to name a few ways you can use this Home Canned Good! Any remaining Pineapple Canning Liquid can be canned up as well! Just place the liquid into jars, leaving a 1/2" headspace and follow steps 6-9 in the recipe above. This can then be used for Cocktails, Mocktails or for adding to Fruit Punch!
