Zucchini Garlic Parmesan Wedges

Follow along and see how to make these crispy zucchini wedges that have a yummy garlic bread / potato wedge flare to them! By combining zucchini cut into wedges and topped with this combination of herbs & spices, you end up with a great appetizer, snack or side dish that pairs well with pizza sauce.
Ingredients
- 4 Zucchini (medium size)
- 1/2 Cup Parmesan Cheese (grated)
- 1/2 tsp Oregano
- 1/2 tsp Thyme
- 1/2 tsp Basil
- @ 1-2 tsp Garlic Powder (to taste)
- @ 1/4 tsp Salt (to taste)
- @ 1/4 tsp Black Pepper (to taste)
- Olive Oil (to drizzle over Zucchini Wedges)
Instructions
- Cut ends off of Zucchini, then cut into wedges. Removing the triangular side to create a flat surface for the seasoning blend.
- In a small bowl combine the Parmesan Cheese, Oregano, Thyme, Basil, Garlic Powder, Salt & Pepper. Stir until combined.
- Place Zucchini Wedges in a Jelly Roll pan or raised edge pan (with baking rack if desire extra crispy results).
- Drizzle Olive Oil over all of the Zucchini Wedges and then sprinkle the Garlic Parmesan Seasoning Blend over the wedges as well.
- Bake at 375 Degrees for 30 min, then place under broiler for 1-2 min until crisp and golden brown on top.
- Enjoy!
Notes
Garnish with fresh chopped parsley for a colorful and tasty finish! This pairs well with pizza or spaghetti sauce for dipping.
You can make these tasty treats as garlicy and spicy as you want. Play around with the combination of flavors. This garlic parmesan blend I used above has all the yummy garlic bread & potato wedge influences to make me want to go back for more! By using Zucchini, it is a healthy and savory option for appetizers, snacks and even side dishes!
