I also go over, step by step, How to Water Bath Can this Homemade Pizza Sauce. That way the sauce stores for an extended period of time in your pantry and can be used throughout the year with appetizers as a condiment and for adding some great sauce to your next pizza night!

Prep Time 15 minutes
Cook Time 4 hours
Water Bath Canning Processing Time 35 minutes
Total Time 4 hours 50 minutes

Ingredients

  • 8 Cups Tomatoes (Blanched, Peeled & Mashed)
  • 1/4 Cup Lemon Juice
  • 2 Tbl Sugar
  • 1 Tbl Garlic (Minced)
  • 1 tsp Garlic (Powder)
  • 3 tsp Oregano
  • 1 tsp Onion Powder
  • 3 tsp Salt (Canning Salt)
  • 1 tsp Black Pepper
  • [1 tsp Basil (Optional)]

Instructions

  1. Blanch, Peel & Mash Tomatoes, [for an extra smooth sauce, use a food mill to remove seeds as well] then add all ingredients into a Roaster Oven (or Dutch Oven if cooking on the stove/cooktop).
  2. Mix ingredients until well combined.
  3. Cook at 350 degrees in Roaster Oven, stirring occasionally, until sauce is of desired thickness (or bring to boil and lower to simmer and cook until sauce is of desired thickness if cooking on stove/cooktop).
  4. Use an immersion blender and blend mixture in Roaster Oven/Dutch Oven until it is a smooth sauce consistency.
  5. Then add the Pizza Sauce to warmed jars, leaving a 1/2" headspace.
  6. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
  7. Place jars into water bath canner for processing, making sure water covers the jars by an inch or two. The minimum processing time is 35 min; add time as necessary based on your altitude.
  8. Once processing is complete, let the jars sit in the water bath canner for about 5 minutes, then transfer to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
  9. After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
  10. If any jars did not seal, place them in the refrigerator for enjoying now!

Notes

Small to Medium size batches of Pizza Sauce take @ 4-5 hours & Large batches take @ 5-6 hours to come to a thickened pizza sauce. However, the thickness of the sauce is all to personal preference!

You can play around with the combination of herbs & spices to your preference; like it spicy, add some red pepper flakes, like basil, add it in as well.
