Vegetable Potage (French Thick Vegetable Soup)

Vegetable Potage - French Thick Vegetable Soup Ingredients and an Instant Pot

Hearty & Delicious Homemade Vegetable Potage. Potage is a French Thick Soup and for today's recipe we will be combining some vegetables from our refrigerator & pantry to make this tasty soup! This is a wonderful way to cook vegetables that may need to be used up; by putting them into a Thick & Hearty Vegetable Soup!

Prep Time 10 minutes
Instant Pot Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 Tbl Butter
  • 4-5 Carrots (Peeled & Diced) [@ 1lb]
  • 2 Large or 4 Small Russett Potatoes (Peeled & Diced)
  • 1 Large Leek (Finely Chopped/Sliced)
  • 2 Small Onions (Diced)
  • 1/4 tsp Nutmeg
  • 1/2 tsp Salt (or to taste)
  • 1/4 tsp Pepper (or to taste)
  • 1 Quart Vegetable or Chicken Stock
  • 2/3 Cup Heavy Cream or Half & Half
  • 1 tsp Tomato Paste or Tomato Powder

Instructions

  1. Sauté Carrots, Potatoes, Leek & Onions in Butter [Instant Pot Sauté Setting] about 5 min, or until Vegetables are slightly tender.
  2. Add Nutmeg, Salt, Pepper & Vegetable/Chicken Stock and stir together.
  3. Bring Mixture up to a Simmer, lower temperature, cover & Simmer @ 30 min [Instant Pot Soup/Broth Setting, 30 min timer].
  4. If using Instant Pot, Quick Release pressure and remove lid.
  5. Using an Immersion Blender, puree Vegetable Potage until smooth.
  6. In a small bowl or measuring cup, combine Heavy Cream/Half & Half and Tomato Paste/Tomato Powder and mix until well combined.
  7. Stir Cream mixture into Vegetable Potage.
  8. Enjoy!

Notes

This Thick & Hearty Vegetable Potage goes well with a Rustic Bread - French Bread or a Cheddar Dill Bread Bowl work very well to make this a Delicious Meal!


This Vegetable Potage or French Thick Vegetable Soup is easily prepared in the Instant Pot. But you could also make this soup on the stovetop in a Dutch Oven!
