Canning Great Northern Beans (White Beans)

Presto Digital Pressure Canner - Great Northern Beans

Today we will be going over step-by-step how to Can Great Northern Beans (White Beans) using the no soak method in the Presto Digital Pressure Canner. Great Northern Beans are wonderful in Chicken Chili (White Lightning Chili) as well as in Cold Bean Salads & Cowboy Caviar!

Prep Time 5 minutes
Canner Processing Time 1 hour 15 minutes
Additional Time (Presto Digital Pressure Canner) 1 hour 30 minutes
Total Time 2 hours 50 minutes

Ingredients

  • Dried Great Northern Beans (White Beans)
  • Water
  • Canning Salt (Optional)

Instructions

  1. Add water to bottom line (amount is as recommended by manufacturer of canner) & canning rack/tray to bottom of Presto Digital Pressure Canner Liner Pan.
  2. Plug in Presto Digital Pressure Canner. Select [Pressure Can] option on left of screen by pressing the Control Knob.
  3. Turn Control Knob to select Processing Time for recipe; Great Northern Beans Process 75 min. Press Play Button [Insert Jars] will light up on screen.
  4. Fill jars you will be using for canning half full of water and place jars into canner for warming.
  5. Remove Regulator from the canner cover and place aside until later. Place cover on canner & move to [Lock] position. Lower sensor arm & turn green knob to lock in place. Press Play Button [Warm] lights up on the screen and the canner will warm the jars you will be using for canning.
  6. The canner will beep twice when completed and [Fill Jars] will light up on screen. Unlock the cover & sensor arm, remove the jars and discard the water.
  7. Then add 1/2 Cup of Dried Great Northern Beans to each warmed Pint Jar. Canning Salt is optional and to personal preference; add a 1/2 tsp per Jar if you want a salted bean.
  8. Boil Water in a Kettle & add Hot Water to each jar, leaving a 1" headspace in the jar.
  9. Use Bubble Removal Tool (or a chopstick works well too) to remove any bubbles by sliding along the sides of the Great Northern Beans inside each jar.
  10. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
  11. Place jars into canner for processing, place cover on canner & move to [Lock] position. Lower sensor arm & turn green knob to lock in place. Press Play Button [Heat] lights up on the screen and the canner will begin heating & building pressure.
  12. Once the proper temperature is reached, [Vent] & the timer [010] will light up on the screen; the canner will vent for 10 minutes. Once completed, the canner will start beeping.
  13. At this point [Put Regulator on] will light up on the screen. Place Regulator on the vent pipe on the cover and rotate to CAN position. Press Play Button. [Can] will light up on the screen.
  14. Once the proper canning temperature is reached, the canner will beep twice and [Canning] with light up on the screen. The originally set timer will begin to count down and the canner is now processing the jars.
  15. Once processing is complete, the canner will beep 4 times and [Cool] will light up on the screen. Let the canner cool & release all the pressure, this may take about 1.5 hours. The last 10 min of the cooling phase has a timer & [010] will light up on the screen. When completed, the canner beeps 10 times and [Done] lights up on the screen.
  16. Press & hold the X button for 3 seconds; the screen will reset, and the processing is complete!
  17. Then Unlock the cover & sensor arm, remove the jars and Transfer jars to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal! In 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
  18. If any jars did not seal, place them in the refrigerator for enjoying now!
