Today we will be doing some Crock Pot Cooking & make a Savory Fall Recipe of Apple Cranberry Pork Roast. By combining the Classic Fall Flavors of Apples & Cranberries, we end up with a Delicious Dinner that might be a nice option for Thanksgiving or the Holidays! The Turkey can be cooking in the oven while the Apple Cranberry Pork Roast cooks in the Slow Cooker! Apple Cranberry Pork Roast

Apple Cranberry Pork Roast Recipe

The Classic Fall Flavors of this Apple & Cranberry Pork Roast creates a Delicious Dinner that might even be a nice option for the Holidays!

Prep Time 5 minutes
Slow Cooker Cook Time (Low) 4 hours
Total Time 4 hours 5 minutes

Ingredients

  • 2-3 Lb Pork Loin Roast
  • 2 Tbl Favorite Dry Rub or Seasoning Salt
  • 2-3 Apples (Peeled, Cored & Sliced) [1 Apple per Lb of Pork Loin Roast]
  • 1 Cup Beef Broth (Vegetable or Chicken Broth work well too)
  • 1 Cup Whole Cranberries (or 1/2 Cup - 1/2 Can Whole Canned Cranberries)

Instructions

  1. Place 1 Sliced Apple to the Base of Crockpot/Slow Cooker Liner Dish and Pour the Beef Broth over these Apple Slices.
  2. Apply Dry Rub to all Sides of the Pork Roast and place the Prepared Pork Roast on top of the Apple Slices in the Crockpot/Slow Cooker.
  3. Top the Pork Roast with the remaining Sliced Apple pieces and Sprinkle the Cranberries into the Crockpot/Slow Cooker Liner Dish & over the Pork Roast.
  4. Cover & Cook on Low for 4-6 Hours or until the Pork Roast internal Temperature reaches 170 Degrees.
  5. Remove Cooked Pork Roast, with some Apple Slices & Cranberries on top, from the Crockpot/Slow Cooker and allow to rest on a Platter.
  6. Pour the Cooking Liquids, remaining Apple Slices & Cranberries into a Saucepan and bring to a Simmer on the Stovetop.
  7. Using an Immersion Blender, Create a Smooth Sauce.
  8. Add Salt & Pepper (or Brown Sugar if you prefer a Sweet Sauce) to Taste.
  9. Combine 1-2 Tbl Corn Starch with 2-4 Tbl Water and mix in a small bowl to create a Slurry. Stir the Corn Starch Slurry into the Apple Cranberry Sauce and bring to a simmer to create a Gravy.
  10. Slice the Pork Roast and Pour some of the Apple Cranberry Gravy over the top. Pour the remaining Apple Cranberry Gravy into a Dish or Gravy Boat and serve on the side as well.
  11. Enjoy this Savory Apple Cranberry Pork Roast for Dinner or perhaps as another protein for your next Holiday Gathering!
