Zucchini Au Gratin / Scalloped Zucchini Baked Dish

Zucchini Au Gratin Scalloped Zucchini Baked Dish

Follow along and see how to make this creamy & delicious side dish! By combining sliced zucchini with layers of creamy cheese sauce & shredded cheese, the result is a wonderful savory baked dish that is oh so good!

Prep Time 10 minutes
Cook Time 30 minutes
Zucchini Prep Time (Removing Moisture from Sliced Zucchini) 30 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 3-4 Medium Zucchini (or 2 Large) - About 3 Lb total [plus salt to sprinkle over to help remove moisture from Zucchini once sliced]
  • 1 Tbl Butter
  • 1 tsp Minced Garlic (2 cloves)
  • 1/2 Cup Heavy Cream or Half & Half
  • 4 oz Cream Cheese (If you want it extra creamy, use the whole 8 oz package of Cream Cheese!)
  • 1/2 Cup Shredded Cheddar Cheese (for Sauce)
  • 1/4 Cup Shredded Parmesan Cheese
  • 1 tsp Onion Powder
  • Salt & Pepper to taste
  • 1/2 Cup Shredded Mozzarella Cheese (for layering with zucchini) [or more if you want it extra cheesy!]
  • 1/2 Cup Shredded Cheddar Cheese (for layering with zucchini) [or more if you want it extra cheesy!]

Instructions

  1. Preheat oven to 400 degrees
  2. Place 1/4" sliced zucchini on a paper towel and sprinkle with salt. Let sit @ 30 min to help draw out the moisture from the zucchini slices (this will help prevent a soggy baked dish). Then blot zucchini slices dry and set aside.
  3. Prepare the sauce by placing the Butter in a Pan over medium heat until melted. Then add the Garlic and cook a few minutes until fragrant.
  4. Add in the Heavy Cream (or Half & Half) and Cream Cheese, cook down until smooth.
  5. Then stir in the Shredded Cheddar Cheese, Shredded Parmesan Cheese, Onion Powder and Salt & Pepper to taste, cooking until a smooth cheese sauce results. Remove from heat and set aside.
  6. In a baking dish, arrange the Zucchini Slices in rows, overlapping slightly, to create a layer.
  7. Spread/Dollop cheese sauce over Zucchini Slice layer, then sprinkle with Shredded Cheddar Cheese & Shredded Mozzarella Cheese. Repeat until Zucchini Slices are used up.
  8. Bake (uncovered) for 30-35 min, until golden brown on top.
  9. Remove from oven and let cool slightly before serving.
  10. Enjoy!

You can make this awesome side dish as creamy & cheesy as you like, by adding more cream cheese & shredded cheese to the sauce and layers! Or you could make it on the healthier side by using reduced fat cream cheese & shredded cheeses and keeping their portions to a minimum. This baked dish is a great savory zucchini recipe option for going with your next meal!
