By combining zucchini cut in half to create little boats & topping them with this combination of ground beef, tomato sauce, herbs & spices and cheese, you end up with a flavorful appetizer, snack or side dish. Stuffed Zucchini Boats

Zucchini Dish (Stuffed Zucchini Boats)

By combining zucchini cut in half to create little boats & topping them with this combination of ground beef, tomato sauce, herbs & spices and cheese, you end up with a flavorful appetizer, snack or side dish. Perfect for game day!

Prep Time 10 minutes
Cook Time 20 minutes
Additional Time (Zucchini Prep) 20 minutes
Total Time 50 minutes

Ingredients

  • 3-4 Slender Zucchini
  • 1 Lb Ground Beef
  • 1 tsp Italian Seasoning
  • 1 tsp Smoked Paprika
  • 1/2 tsp Salt
  • Pepper to Taste
  • 1 Tbl Olive Oil
  • 1/2 Medium Onion (Diced)
  • 1/2 tsp Minced Garlic (if you like Garlic, add more!)
  • 1 Cup Marinara Sauce or Italian Tomato Sauce (or try out the Homemade Pizza Sauce Recipe!)
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Grated Parmesan Cheese

Instructions

  1. Cut ends off Zucchini, then cut Zucchini in half lengthwise and remove seeds, creating a boat structure.
  2. Sprinkle salt on cut side of Zucchini and place Zucchini cut side down onto a paper towel for @ 20 min. This will remove moisture from the Zucchini & help prevent our Zucchini boats from getting soggy!
  3. Brown the Ground Beef, then add the Italian Seasoning, Smoked Paprika, Salt & Pepper. Mix well and remove from heat.
  4. With Olive Oil in pan, cook Onions until translucent, add Garlic and cook until fragrant, then add the Marinara Sauce & stir until combined.
  5. Add Beef Mixture to the Tomato Sauce Mixture. Simmer a few minutes until slightly thickens and remove from heat.
  6. Pat off any visible moisture to Zucchini Boats and place them cut side up on a Baking Sheet Pan. Add Tomato & Meat Sauce to each Zucchini Boat.
  7. Sprinkle some Parmesan Cheese to each boat, then sprinkle some Mozzarella Cheese on each as well. Top with any remaining Parmesan Cheese.
  8. Bake at 375 Degrees for 20-25 min, until cheese is golden brown on top.
  9. Serve Warm & Enjoy!

This is a versatile recipe! Try different flavor combinations, such as Zucchini Pizza Boats with Italian Sausage, Pepperoni, Pizza Sauce and Mozzarella Cheese. Or Zucchini Taco Boats, with Taco Flavored Ground Beef, Onions, Cheddar Cheese and any other toppings you like! You can change up the flavor by trying different ground meat as well - Ground Chicken, Ground Turkey, Ground Pork or Italian Sausage. This is great as an appetizer or can be a meal with an added side dish!
