Zucchini Pumpkin Bundt Cake

Zucchini Pumpkin Spice Bundt Cake

By combining shredded zucchini with this combination of spices and ingredients, you end up with a flavorful cake that is reminiscent of fall flavors! Follow along and check out this sweet recipe using zucchini; you may just want to cozy up with a blanket & warm beverage and enjoy!

Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 3 Cups Flour
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg (Ground)
  • 1/4 tsp Cloves (Ground)
  • 1/2 tsp Ginger (Ground)
  • 1/2 tsp Salt
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 3 Eggs
  • 1 Cup Pumpkin Puree
  • 1 Cup Brown Sugar
  • 1/2 Cup Butter (1 Stick) - Melted
  • 1 Tbl Vanilla
  • 2 Cups Zucchini (Shredded)
  • 1 Cup Raisins

Instructions

  1. In a bowl, add the Flour, Cinnamon, Nutmeg, Cloves, Ginger, Salt, Baking Powder & Baking Soda - mix to combine.
  2. In another bowl, whisk the Eggs, then fold in the Pumpkin Puree, Brown Sugar, Melted Butter and Vanilla, until well combined.
  3. Fold the Shredded Zucchini into the wet ingredients, then add the wet ingredients to the dry ingredients and mix together until batter formed.
  4. Fold in the Raisins.
  5. Pour the Zucchini Pumpkin batter into your Bundt Cake Pan (or 9" Loaf Pan) & place pan onto a cookie sheet.
  6. Bake at 350 Degrees for @ 1 Hr. Test doneness with a toothpick (if toothpick comes out clean when poked into the cake, it is done).
  7. Allow Bundt Cake to cool in pan for @ 10 minutes, then turn Bundt Cake out onto a cooling rack to cool completely.
  8. Place Bundt Cake onto a Serving Plate. Sprinkle with Powdered Sugar, Glaze or Frosting of choice & Enjoy!
