Slow Cooker Rosemary & Thyme Chicken Dumpling Soup

Rosemary & Thyme Chicken Dumpling Soup prepared in the Crock Pot

Easily make some Flavorful & Cozy Rosemary & Thyme Chicken Dumpling Soup with your Slow Cooker! This is the ultimate comfort food on a cold day or if you're in the mood for a thick hearty soup!

Prep Time 10 minutes
Soup Slow Cooker Cook Time (Low) 6 hours
Dumpling Slow Cooker Cook Time (High) 30 minutes
Total Time 6 hours 40 minutes

Ingredients

Soup

  • 1 Cup Carrots (Diced) (@ 3 Carrots)
  • 1/2 Cup Celery (Diced) (@ 2 Celery Stalks)
  • 1/2 Cup Onion (Diced) (@ 1 Medium Onion)
  • 2 Cloves of Garlic (Minced) (@ 1 tsp Pre-Minced Garlic)
  • 1/2 Cup White Wine (You can Substitute an Additional 1/2 Cup of Chicken Stock if you do not want to use White Wine)
  • 2 Cups Chicken Stock (or Chicken Broth) [If you like a Thinner Soup, use 4 Cups or 1 Quart of Chicken Stock]
  • 2 Chicken Breasts (Boneless/Skinless) (or 4-5 Chicken Thighs, Boneless/Skinless)
  • 2 Sprigs Fresh Rosemary (@ 1 Tbl Dry Minced Rosemary)
  • 2 Sprigs Fresh Thyme (@ 1 tsp Dry Minced Thyme)
  • 1/2 Cup Heavy Cream
  • 1/2 Cup Milk
  • 1 Tbl Cornstarch
  • 1/2 tsp Salt (to taste)
  • 1/4 tsp Pepper (to taste)

Dumplings

  • 1 Cup Flour (All-Purpose)
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Rosemary
  • 1/2 tsp Thyme
  • 1/2 Cup Milk
  • 2 Tbl Butter (Melted)

Instructions

  1. Place the Carrots, Celery, Onion, Garlic, White Wine (if using) & Chicken Stock into the Slow Cooker.
  2. Nestle the Chicken Breasts (or Chicken Thighs) into the above ingredients in the Slow Cooker.
  3. Cover your Chicken with the Rosemary, Thyme & Butter and add the Cover to the Slow Cooker.
  4. Cook this Portion of the Soup for 3 Hours on High or 6 Hours on Low.
  5. Once the cook time is completed, remove the Chicken and shred it with 2 forks, then place the Chicken back into the Slow Cooker.
  6. Mix together the Heavy Cream, Milk & Cornstarch in a small bowl or measuring cup to create a Corn Starch Slurry. Then stir the Corn Starch Slurry into the Soup in the Slow Cooker. This will help thicken & create a cream base for the soup!
  7. In a Small Mixing Bowl, combine the Flour, Baking Powder, Salt, Rosemary & Thyme and mix until combined. Then Add the Milk & Melted Butter and stir to create the Rosemary & Thyme Dumpling Dough.
  8. Add Dollops of Rosemary & Thyme Dumpling Dough into the Soup in the Slow Cooker using 2 Spoons, a small scooper or your hands.
  9. Cook the Rosemary & Thyme Chicken Dumpling Soup in the Slow Cooker an additional 30 min on High or 1 Hour on Low in order to cook the Dumplings.
  10. The Dumplings will float to the top when cooked. You can leave as is and serve. Or if you prefer a Thinner Soup, simply add 2 Cups - 1 Quart of Warmed Chicken Stock/Chicken Broth and stir.
  11. Enjoy this Rosemary & Thyme Chicken Dumpling Soup with some Rustic Bread or Fresh Homemade Buttermilk Biscuits!
