Reuben Egg Rolls

Today we will be making Reuben Egg Rolls using leftovers of our Corned Beef and Cabbage (Remember this one around St. Patrick’s Day). However, this is good any time of the year and can be served as an appetizer or snack at your next gathering. It is a great way to use the corned beef in a different way for a tasty treat! Be sure to have Thousand Island Dressing for dipping and your platter with be empty in no time! Hors Devours, game day spread or just because; these are oh so good and easy to prepare. If you like these flavors in your egg rolls, you can try a twist and make a Rachel Egg Roll with turkey instead of the corned beef!

What You Need to Make Your Reuben Egg Rolls

  • Corned Beef (Leftovers or Fresh from the Deli/Instant Pot/Crock Pot)
  • Sauerkraut
  • Egg Roll Wrappers
  • Swiss Cheese Slices
  • Avocado Oil Spray (optional)
  • Thousand Island Dressing (for Dipping)

Instructions

  1. Add Warm Corned Beef, (if using leftovers, heat in the microwave) pieces to Egg Roll Wrapper
  2. Heat Sauerkraut on stovetop or in microwave
  3. Add slightly drained Sauerkraut on top of the Corned Beef
  4. Top with Slice of Swiss Cheese
  5. Roll up Egg Roll, folding sides in as you go, use small amount of water to seal end
  6. Place in Air Fryer basket or rack
  7. These crisp up nicely without oil, but if you want them extra golden and crispy, spray lightly with avocado oil
  8. Cook on 400 for 7-8 minutes (keep an eye on them, as cook time varies with air fryers and they go from almost done, to yep, they’re pretty (almost too) crispy quick!)
  9. Serve with Thousand Island Dressing for dipping sauce
  10. Enjoy!
