Reuben Sandwiches

Today we will be making Reuben Sandwiches using leftovers of our Corned Beef and Cabbage (Remember this one around St. Patrick’s Day). However, this Sandwich is good any time of the year and can be served for Lunch or Dinner. It is a great way to use the leftover corned beef in a different way for another meal. If you like these flavors in your sandwich, you can try a twist and make a Rachel with turkey instead of the corned beef!

What You Need to Make Your Reuben Sandwiches

  • Corned Beef (Leftovers or Fresh from the Deli/Instant Pot/Crock Pot)
  • Sauerkraut
  • Rye Bread
  • Swiss Cheese Slices
  • Thousand Island Dressing

Instructions

  1. Butter one side of Rye Bread x 2 and add Swiss cheese slices
  2. Place on griddle or skillet (like making a grilled cheese sandwich)
  3. Add Warm Corned Beef, (if using leftovers, heat in the microwave) pieces to sandwich on griddle/skillet and cook on medium high until nice golden color on both sides
  4. Heat Sauerkraut on Stovetop or in microwave
  5. Open cooked Swiss Cheese & Corned Beef Sandwiches and add slightly drained Sauerkraut on top of the Corned Beef
  6. Top with Thousand Island Dressing to taste
  7. Plate Sandwiches and add your favorite side (French Fries or Tator Tots are a crowd pleaser)
  8. Enjoy!

Ooey Gooey Reuben Sandwiches with lots of Thousand Island Dressing, made using leftovers of our Corned Beef and Cabbage (Remember this one around St. Patrick’s Day).
