Dilly Beans

Homemade Canned Dilly Beans in Jars

By combining fresh green beans with this pickling brine, you end up with a crunchy green bean that is great for snacking! I also go over, step by step, How to Water Bath Can these Dilly Beans. That way the Pickled Green Beans store for an extended period of time in your pantry and can be used throughout the year for a snack and for adding some great garnish to your next Bloody Mary or drink!

Prep Time 15 minutes
Cook Time 15 minutes
Water Bath Processing Time 10 minutes
Total Time 40 minutes

Ingredients

  • Fresh Green Beans (The More the Better!)
  • Pickle Brine of Choice (I Use Ball's Kosher Dill Pickle Mix in this Recipe)
  • 2 Quarts Water
  • 1 Quart Vinegar (5% Acidity)
  • 1 Cup Ball Kosher Dill Pickle Mix

Instructions

    1. Combine Water, Vinegar & Pickle Mix into a Dutch oven or cooking pot.
    2. Stir and bring up to a boil. Lower to a simmer until ready to add to jars.
    3. Wash Fresh Green Beans and drain in a colander.
    4. Place Green Beans into warmed jars, packing tightly, then add warm Brine to Jars, leaving a 1/2" headspace.
    5. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
    6. Place jars into water bath canner for processing, making sure water covers the jars by an inch or two. The minimum processing time is 10 min; add time as necessary based on your altitude.
    7. Once processing is complete, let the jars sit in the water bath canner for about 5 minutes, then transfer to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
    8. After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
    9. If any jars did not seal, place them in the refrigerator for enjoying now!

Notes

You can use your favorite pickling brine for this recipe. Or check out any number of Dilly Bean Brine recipes in Ball Canning Cookbooks!


You can play around with the combination of spices in your brine to your preference; like it spicy, add some red pepper flakes or fresh jalapenos, like more garlic, add it in as well. The blend I used above has a Crisp Dill result that I can’t wait to use in our next Bloody Mary drink! Having these Canned Homemade Dilly Beans in your pantry will allow them to be used throughout the year with relish trays, as a condiment & for adding some great flavor to your next brunch drink!
