Today we will be making some Delicious & Easy Pumpkin Spice Muffins! What’s fun about this muffin recipe is that I use a little something different in order to give us that yummy pumpkin spice flavor – a secret ingredient! These muffins would make a great addition to your Breakfast, Packed into Lunches or as a Tasty Snack with some Coffee, Latte or Tea. These Pumpkin Spice Muffins are Hearty & Filling. Plus, what a great way to use up some items in the Pantry & Refrigerator!

Easy Pumpkin Spice Muffins

Easy Pumpkin Spice Muffin Recipe - made with a Secret Ingredient

Easy Pumpkin Spice Muffins made with something from the pantry to get that yummy pumpkin spice flavor - Great Fall Flavored Muffins Recipe!

Prep Time 10 minutes
Bake Time (400 Degrees) 20 minutes
Cooling Time 10 minutes
Total Time 40 minutes

Ingredients

Pumpkin Spice Ingredients

  • 6 Cups Special K Pumpkin Spice Cereal
  • 2 1/2 Cups Milk

Dry Ingredients

  • 3 Cups Flour
  • 1 Cup Sugar
  • 2 Tbl Baking Powder
  • 1 tsp Salt
  • 1 Cup White Chocolate Chips (Optional)

Wet Ingredients

  • 2 Eggs
  • 1/2 Cup Neutral Oil (Avocado, Vegetable or Canola Oil work well)

Optional Topping Ingredients

  • 2 Tbl Sugar
  • 1 tsp Cinnamon

Instructions

      1. Pour Pumkin Spice Ingredients (Special K Pumpkin Spice Cereal & Milk) into a mixing bowl and set aside to allow the milk to soak & soften the cereal - about 2 min.
      2. Combine Dry Ingredients (Flour, Sugar, Baking Powder, Salt & White Chocolate Chips - if using) into a large mixing bowl and Mix until well combined, set aside.
      3. Beat together the Wet Ingredients (Eggs & Oil) in a small bowl until well combined.
      4. Pour the prepared Pumpkin Spice Ingredients & Wet Ingredients into the Dry Ingredients and Stir until incorporated, to create the Easy Pumpkin Spice Muffins Batter.
      5. Scoop the Easy Pumpkin Spice Muffins Batter into a Muffin Pan. (Silicone Muffin Pans work well!) (see Notes below*)
      6. Sprinkle Optional Topping (Sugar & Cinnamon combined in a small dish to create a cinnamon sugar mixture) evenly over each Muffin if desired.
      7. Bake the Easy Pumpkin Spice Muffins at 400 Degrees for 15-20 min or until a Toothpick comes out with a few crumbs on it.
      8. Cool the Easy Pumpkin Spice Muffins, in the muffin pan, for 10 min. Then remove the Muffins from the pan and cool directly on a Cooling Rack 5 min.
      9. Enjoy!

Notes

  • Place Silicone Muffin Pans over a Baking Pan or Cookie Sheet to help give structure & support for placing in oven, while baking & when removing from oven.
  • These Easy Pumpkin Spice Muffins Store (once completely cooled) in an airtight container about a week at room temp and in the refrigerator about 2 weeks.
