Chocolate Chip Pumpkin Cookies

Chocolate Chip Pumpkin Cookies Recipe

These Delicious & Wonderfully Fall Flavored Chocolate Chip Pumpkin Cookies have a Moist Chewy Crumb with little pops of Chocolate!

Prep Time 10 minutes
Refrigeration Time 1 hour
Bake Time (350 Degrees) [10-15 min] 15 minutes
Total Time 1 hour 25 minutes

Ingredients

Butter Mixture Ingredients

  • 1 Cup (2 Sticks) Butter (Room Temp)
  • 1 Cup Brown Sugar
  • 1/2 Cup Granulated Sugar

Flour Mixture Ingredients

  • 3 Cups Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 Tbl Pumpkin Pie Spice

Pumpkin Mixture Ingredients

  • 1 Cup Canned Pumpkin (@ half of 15 oz can) [*see Notes below]
  • 1 tsp Vanilla

Chocolate Ingredients

  • 2 Cups Mini Chocolate Chips

Instructions

    1. In a Stand or Bosch Mixer, Cream Butter & Sugars (Butter, Sugar & Brown Sugar) until light & fluffy.
    2. Combine the Flour Mixture Ingredients (Flour, Baking Powder, Baking Soda, Salt & Pumpkin Pie Spice) in a small mixing bowl & mix until combined.
    3. Add the Flour Mixture, mixing in a little at a time, into the Butter Mixture until combined.
    4. Combine the Pumpkin Mixture Ingredients (Canned Pumpkin & Vanilla) and add to above.
    5. Next Mix in the Mini Chocolate Chips until distributed throughout the Cookie Dough.
    6. Cover and Place the Chocolate Chip Pumpkin Cookie dough in the Refrigerator about 1 hour to chill.
    7. Scoop the Chocolate Chip Pumpkin Cookie dough onto Parchment Paper Lined Baking Sheets, about 2" apart.
    8. Bake the Chocolate Chip Pumpkin Cookies at 350 Degrees for 10-15 min or until the edges are slightly Golden Brown and the center is still soft or baked to your liking.
    9. Allow the Chocolate Chip Pumpkin Cookies to cool on a Cooling Rack.
    10. Enjoy these Fall Flavored Cookies with some Cold Milk, Apple Cider or Hot Cocoa!

Notes

  • Easily double this recipe to use a full 15 oz Can of Pumpkin or 1 Pint of Home Canned Pumpkin (after being pureed or mashed).
  • These Delicious Chocolate Chip Pumpkin Cookies store well in an air-tight container or cookie jar about a week.
