Bell Pepper Relish

Bell Pepper Relish

By combining fresh green bell peppers with this sweet & sour brine, you end up with a tasty Bell Pepper Relish, that can be used throughout the year for a condiment, as a snack, in soups & for adding some great flavor to your pasta salads or Cowboy Caviar Recipes!

Prep Time 10 minutes
Cook Time 20 minutes
Water Bath Processing Time 15 minutes
Total Time 45 minutes

Ingredients

  • 4 Quarts Green Bell Peppers (Chopped)
  • 2 Cups Onions (Chopped)
  • 2-3 Jalapeno Peppers (Diced)
  • 3 1/2 Cups Vinegar (5% Acidity)
  • 1 1/2 Cups Sugar
  • 4 tsp Salt (Canning Salt)
  • 1/8 tsp Pickle Crisp (optional) - into each pint jar when canning

Instructions

  1. Wash & prepare Bell Peppers, Onions and Jalapenos, place in a bowl and set aside.
  2. To prepare brine, place Vinegar, Sugar & Salt in pot and stir together. Bring up to a boil so that the sugar is dissolved.
  3. Stir Pepper & Onion Mixture into the brine. Bring back up to a boil, then simmer 20 minutes.
  4. Add Pepper Relish to pint jars, leaving a 1/2" headspace. Add optional Pickle Crisp to each jar.
  5. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
  6. Place jars into water bath canner for processing, making sure water covers the jars by an inch or two. The minimum processing time is 15 min; add time as necessary based on your altitude.
  7. Once processing is complete, let the jars sit in the water bath canner for about 5 minutes, then transfer to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
  8. After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
  9. If any jars did not seal, place them in the refrigerator for enjoying now!

You can play around with the combination of spices in your brine to your preference; like it spicy, add some red pepper flakes or more fresh jalapenos. Like even more spice? Add some diced serrano peppers as well! Having this Canned Homemade Bell Pepper Relish in your pantry will allow you to have at your fingertips this yumminess in a jar.
