Today we will be making some Homemade Rhubarb Apple Muffins – not your typical Strawberry Rhubarb Sweet & Tart Combination! These Muffins would make a great addition to your Breakfast, Packed into Lunches or as a Delicious Snack on the go. The Muffins are Soft & Moist with a Sweet & Crunchy Sugar Topping – what a Great Combination! Try this flavor combination of Rhubarb with your favorite Apple variety and make some tasty muffins. This recipe is a little something different & a nice way to use some of your Rhubarb Harvest!

Rhubarb Apple Muffins

Homemade Rhubarb Apple Muffins Recipe

Try this flavor combination of Rhubarb with your favorite Apple variety and make these tasty muffins!

Prep Time 5 minutes
Bake Time (400 Degrees) 20 minutes
Total Time 25 minutes

Ingredients

Dry Ingredients

  • 1 1/2 Cups Flour
  • 1 Cup Sugar
  • 3/4 Cup Oatmeal
  • 2 tsp Baking Powder
  • 1/2 tsp Salt

Wet Ingredients

  • 3/4 Cup Sour Cream
  • 1/2 Cup Neutral Oil (Avocado, Vegetable or Canola Oil)
  • 1 tsp Vanilla
  • 2 Eggs

Mix Ins

  • 2 Cups Rhubarb (chopped)
  • 2 Cups Apple (chopped) [Honey Crisp or Granny Smith Apples work well]

Topping (Optional)

  • Sugar in the Raw or Cinnamon Sugar

Instructions

  1. Mix all Dry Ingredients in a mixing bowl until well combined. (*see Notes below)
  2. Stir in all Wet Ingredients and mix until well combined.
  3. Fold in the prepared Rhubarb & Apple until well distributed, to create the Rhubarb Apple Muffin Batter.
  4. Scoop the Rhubarb Apple Muffin Batter into Muffin Pan reservoirs (grease or add paper liners if needed)
  5. Place the Prepped Muffin Pan filled with batter into the Refrigerator for 30 min to overnight.
  6. Remove Prepped Muffin Pan from the Refrigerator and sprinkle with Optional Topping of choice.
  7. Bake Rhubarb Apple Muffins at 400 Degrees F for 15-20 min or until toothpick comes out clean from center.
  8. Cool muffins on a cooling rack and enjoy!

Notes

  • If you are watching your sugar or prefer the tart flavor of Rhubarb, use 1/2 Cup Sugar instead and you'll have a delicious but less sweet muffin!


This recipe is a nice way to use Rhubarb from the garden, Farmer’s Market or freezer!

Plus, they pair well with a cup of apple cider, coffee or tea for Breakfast or Brunch!
