Today we will be making a Really Tasty Pasta Dish of Reuben Rotini! This meal has all the Wonderful Flavors of a Reuben Sandwich in a Creamy Pasta Dish. As shown in the Recipe Card or Video below, Reuben Rotini is also a great way to use up Leftover Corned Beef or Pastrami to make a Delicious Dinner! Reuben Rotini Pasta Dish Recipe Prepared in the Instant Pot

Reuben Rotini can easily be prepared in the Instant Pot using either Fresh Corned Beef Brisket or Leftovers! This meal has all the Wonderful Flavors of a Reuben Sandwich in a Creamy Pasta Dish!

Prep Time 5 minutes
Instant Pot Cook Time (High Pressure) with Quick Release 5 minutes
Warming Time to Melt Cheese & Create Creamy Pasta Dish! 15 minutes
Total Time 25 minutes

Ingredients

  • 1 Lb Corned Beef Brisket (see Notes below)
  • 1 Cup Beef Broth
  • 1 Medium Onion (cut into quarters)
  • 1 Lb Rotini Pasta
  • 3 Cups Beef Broth (or Stock)
  • 2 Cups Chicken Broth (or Stock)
  • 1 tsp Caraway Seeds
  • 1/2 Cup Thousand Island Dressing
  • 4 oz Cream Cheese (1/2 a package)
  • 16 oz Sauerkraut (Drained & Squeezed in Paper Towel to dry out)
  • 2 Cups Swiss Cheese (Shredded) (or Shredded Monterey Jack Cheese)

Instructions

    1. Remove Corned Beef Brisket from Package and Rinse under Cool Water to wash off Salty Brine. [Set Seasoning Packet aside for later use in this recipe]
    2. Place Trivet into Base of Instant Pot Liner Pan, then arrange the Onion Quarters on top of the Trivet.
    3. Add Beef Stock/Broth to Instant Pot Liner pan.
    4. Next place the Corned Beef Brisket, Fat Side Up, on top of the Onions.
    5. Sprinkle the Seasoning Packet over the Fat Side of the Corned Beef Brisket.
    6. Apply the Instant Pot Lid, turn Pressure Valve to [Sealing] and press [Pressure Cook or Manual] Button to set the Instant Pot to [High] Pressure and set the timer for 70 min (1 hour, 10 min).
    7. The Instant Pot will come up to pressure and cook the Corned Beef Brisket for 70 min. Once the cook time has finished, allow a Natural Release for 15 min.
    8. Once the Natural Release timer is finished, do a Quick Release by placing a Steam Diverter (if desired) to the Pressure Valve and turning it to [Vent] until all that Steam has released and the little Stem in back falls and is flush with the Instant Pot Lid.
    9. Remove Lid and place Corned Beef Brisket into a Casserole Dish. Using a paper towel, wipe the Seasoning Packet contents off of the Corned Beef Brisket while it is still warm and discard the Seasonings.
    10. Press Cancel on the Instant Pot and discard the Cooking Liquid & Onions, wash & dry the Instant Pot Liner Pan and place back into the Instant Pot.
    11. * Start Recipe from Here if Using Leftovers*

    12. Add the Rotini Pasta, Beef Broth/Stock & Chicken Broth/Stock to the Liner Pan. Apply the Instant Pot Lid, turn Pressure Valve to [Sealing] and press [Pressure Cook or Manual] Button to set the Instant Pot to [High] Pressure and set the timer for 5 min.
    13. Cut the Corned Beef Brisket (or Pastrami) against the grain into desired sized slices & pieces, set aside.
    14. Once the cook time has finished on the Rotini Pasta, do a Quick Release by placing a Steam Diverter (if desired) to the Pressure Valve and turning it to [Vent] until all that Steam has released and the little Stem in back falls and is flush with the Instant Pot Lid.
    15. Remove the Instant Pot Lid and Press [Keep Warm] if it is not already selected.
    16. Stir in the Caraway Seeds, Thousand Island Dressing & Cream Cheese and heat with the Prepared Rotini Pasta in the Instant Pot until melted.
    17. Add the Corned Beef or Pastrami Pieces, Sauerkraut & Shredded Cheese into the Prepared Rotini Pasta in the Instant Pot to create our Reuben Rotini.
    18. Heat the Reuben Rotini through until the Shredded Cheese has melted, and the Creamy Pasta Dish is ready to eat!
    19. Enjoy with some Caraway Seeds Sprinkled on top as a garnish!

    This Recipe includes making a Corned Beef Brisket Fresh in the Instant Pot, but I also show when to start the process if using leftover Corned Beef or Pastrami*
