Corned Beef and Cabbage

Corned Beef and Cabbage Easily Prepared in the Instant Pot Recipe

This Classic Meal is Easy & Consistently Delicious when prepared as shown in the Recipe. So follow along and see how we make some Wholesome & Hearty Corned Beef and Cabbage using the Instant Pot! This Corned Beef and Cabbage is Great for St. Patrick's Day as well as anytime you are craving a Wholesome & Hearty Meal!

Instant Pot Cook Time 1 hour 10 minutes
Instant Pot Natural Release Time 15 minutes
Total Time 1 hour 35 minutes

Ingredients

  • 2-4 Lbs Corned Beef Brisket (with Seasoning Packet)
  • 1 Onion (Medium, cut into Quaters)
  • 3 Cloves of Garlic (minced) [If using pre-minced, @ 1 1/2 tsp]
  • 1 1/2 Cups Beef Stock or Broth (See Note below)
  • 4 Potatoes (Medium, Washed & Cut into Large Pieces)
  • 4 Carrots (Large, Peeled & Cut in Half)
  • 1 Cabbage (Central Stem/Core Removed & Cut into Wedges)

Instructions

  1. Remove Corned Beef Brisket from Package and Rinse under Cool Water to wash off Salty Brine. [Set Seasoning Packet aside for later use in this recipe]
  2. Place Trivet into Base of Instant Pot Liner Pan, then arrange the Onion Quarters on top of the Trivet.
  3. Add Garlic & Beef Stock/Broth (or Beer as noted below in Notes) to Instant Pot Liner pan.
  4. Next place the Corned Beef Brisket, Fat Side Up, on top of the Onions.
  5. Sprinkle the Seasoning Packet over the Fat Side of the Corned Beef Brisket.
  6. Apply the Instant Pot Lid, turn Pressure Valve to [Sealing] and press [Pressure Cook or Manual] Button to set the Instant Pot to [High] Pressure and set the timer for 70 min (1 hour, 10 min).
  7. The Instant Pot will come up to pressure and cook the Corned Beef Brisket for 70 min. Once the cook time has finished, allow a Natural Release for 15 min.
  8. Once the Natural Release timer is finished, do a Quick Release by placing a Steam Diverter (if desired) to the Pressure Valve and turning it to [Vent] until all that Steam has released and the little Stem in back falls and is flush with the Instant Pot Lid.
  9. Remove Lid and place Corned Beef Brisket into a Casserole Dish. Using a paper towel, wipe the Seasoning Packet contents off of the Corned Beef Brisket while it is still warm and discard the Seasonings.
  10. Remove 1/2 - 1 Cup of Cooking Liquid and Set Aside for later.
  11. Press Cancel on the Instant Pot and with the Cooking Liquid and Onions still in the Instant Pot, add Potatoes, Carrots and Cabbage to the Instant Pot Liner Pan as well.
  12. Apply the Instant Pot Lid, turn Pressure Valve to [Sealing] and press [Pressure Cook or Manual] Button to set the Instant Pot to [High] Pressure and set the timer for 3 min.
  13. Cut the Corned Beef Brisket against the grain into desired sized slices and return to Casserole Dish. Pour some Cooking Liquid over the Slice Corned Beef Brisket, cover the dish with Foil and Set Aside until the Vegetables have finished cooking.
  14. Once the cook time has finished on the Vegetables, do a Quick Release by placing a Steam Diverter (if desired) to the Pressure Valve and turning it to [Vent] until all that Steam has released and the little Stem in back falls and is flush with the Instant Pot Lid.
  15. Remove the Cabbage, Carrots and Potatoes and arrange them with the Corned Beef Brisket in the Casserole Dish.
  16. Drizzle some Cooking Liquid over the Corned Beef if desired and Enjoy!

Notes

You can substitute a 12 oz bottle of Guinness Beer for the Beef Stock or Broth. This adds a Fun added flavor you may just want to be your go-to version for Corned Beef and Cabbage!
