Today we will be going over How to Can a great soup or recipe base item, Homemade Beef Bone Broth or Beef Stock! Together we will go over, step by step, the process of Pressure Canning our Beef Bone Broth / Beef Stock in a Cooktop Pressure Canner. This recipe (as shown in Step 1) made a nice big batch of Beef Bone Broth, which can then be refrigerated, frozen, or as I did today, Pressure Canned. Pressure Canning Beef Bone Broth / Beef Stock

Pressure Canned Homemade Beef Bone Broth / Beef Stock

Together we will go over the process of Pressure Canning our Beef Bone Broth / Beef Stock in a Cooktop Pressure Canner. This recipe (as in Step 1) made a nice big batch of Beef Bone Broth, which can then be refrigerated, frozen, or as I did today, Pressure Canned. This Pantry Staple works great in creating some Hearty Soups as well as helps to add wonderful flavor to recipes & gravy!

Prep Time 15 minutes
Pressure Canning Processing Time (Quarts) 25 minutes
Additional Time (Pressure Canner) 1 hour 30 minutes
Total Time 2 hours 10 minutes

Ingredients

  • Homemade Beef Bone Broth / Beef Stock (See Step 1 for Detailed Recipe)
  • Water for adding to Pressure Canner (Amount Varies by Manufacturer)

Instructions

  1. Prepare Beef Bone Broth / Beef Stock as shown in the Recipe Card in Step 1.
  2. Once cook time is completed, turn off Nesco Roaster Oven and remove lid. Allow Beef Bone Broth / Beef Stock to cool slightly.
  3. Using a Hand Strainer, remove Vegetables, Bay Leaves, Bones & Meat (Save the meat for other recipes!).
  4. Use a Fat Separator & Stainless Steel Mesh Strainer to help strain away smaller food particles and to help remove excess fat from the Beef Bone Broth / Beef Stock as necessary.
  5. Then add the Beef Bone Broth / Beef Stock to warmed jars, leaving a 1" headspace in the jar. (Pint or Quart Jars work great)
  6. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
  7. Add water (amount is as recommended by manufacturer of canner) & canning tray to bottom of pressure canner.
  8. Place jars into Pressure Canner for processing.
  9. Let the pressure canner come up to temperature/pressure, once steam is released in a steady stream x 10 min from the release stem, place 10 psi weight onto stem (or adjust temperature until gauge is to desired psi); add weight/gauge reading value as necessary based on your altitude.
  10. Process for 20 min (Pint Jars) or 25 min (Quart Jars).
  11. Once processing is complete, let the canner release all the pressure, then remove its weight & lid and let the jars sit in the pressure canner for about 5 minutes.
  12. Transfer jars to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
  13. After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
  14. If any jars did not seal, place them in the refrigerator for enjoying now!



Notes

Beef Bone Broth / Beef Stock keeps in an airtight container in the refrigerator for about 1 week or in the freezer about 3-6 months. If it is pressure canned as above, it will keep on your pantry shelf much longer!
