Homemade Roasted Tomato Soup

Roasted Tomato Soup in Mason Jars
Roasted Tomato Cook Time (375 Degrees) 45 minutes
Sauté & Cook Time 40 minutes
Pressure Canning Processing Time (Pint) 50 minutes
Total Time 2 hours 15 minutes

Ingredients

Roasted Tomato Ingredients

  • 8 Lbs Tomatoes (Cored & Cut in Half or Quarters if Large Tomatoes)
  • 2 Tbl Canning Salt
  • 1 tsp Black Pepper (ground)

Onion Mixture Ingredients

  • 1-2 Tbl Avocado Oil
  • 2 Cups Onions (Peeled & Coarsely Chopped) (@ 1 Medium Onion)
  • 2 tsp Canning Salt
  • 2 tsp Garlic (minced)
  • 1/2 tsp Black Pepper (ground) (to taste)

Soup Base Ingredients

  • 1 Cup White Wine (dry wine) [Chardonnay, Sauvignon Blanc or Fume Blanc work well]
  • 4 Cups Chicken or Vegetable Stock
  • 2 tsp Basil (dried) [Optional]

Instructions

    1. Core & Half/Quarter Tomatoes, place them skin side down on Rimmed Baking pans.
    2. Bake the Tomatoes at 375 Degrees for 45 min, until the Tomatoes are starting to char and soften.
    3. Cool the Roasted Tomatoes in the pans on a Cooling Rack.
    4. Once the Tomatoes are cool enough to touch, peel off the skin and place the Tomatoes in a large Bowl. Set aside.
    5. Avocado Oil, Onions & Salt into a Dutch Oven and Sauté until the Onions are Soft & Tender.
    6. Add Garlic & Black Pepper and Sauté until the Garlic is fragrant.
    7. Pour in White Wine and Cook until the Wine evaporates.
    8. Stir in the Prepared Roasted Tomatoes, Chicken/Vegetable Stock & Basil (if using).
    9. Simmer the Roasted Tomato Soup 20 min, stirring frequently to prevent sticking or scorching.
    10. Use an Immersion Blender (or Food Processor/Blender in batches) to create a smooth Roasted Tomato Soup of desired consistency. Add Salt & Pepper to taste.
    11. Bring the Roasted Tomato Soup back up to a Simmer.
    12. Ladle Roasted Tomato Soup into warm Canning Jars (Pint or Quart) leaving a 1” headspace.
    13. Remove Bubbles from the Roasted Tomato Soup by slowing sliding a bubble removing tool along the sides & middle of the Soup. Wipe rims of jars and place lid/ring on each jar, finger tightening the ring.
    14. Add water (amount is as recommended by manufacturer of canner) & canning tray to bottom of pressure canner.
    15. Place jars into Pressure Canner for processing.
    16. Let the pressure canner come up to temperature/pressure, once steam is released in a steady stream x 10 min from the release stem, place 10 psi weight onto stem (or adjust temperature until gauge is to desired psi); add weight/gauge reading value as necessary based on your altitude.
    17. Process Jars of Roasted Tomato Soup; 50 min for Pint Jars & 60 min for Quart Jars.
    18. Once processing is complete, let the canner release all the pressure, then remove its weight & lid and let the jars sit in the pressure canner for about 5 minutes.
    19. Transfer jars to a towel/dish drying mat for 12-24 hours for cooling and sealing. Listen for the pings as they seal!
    20. After 12-24 hours, you can remove the rings, making sure the jars all sealed, label jars and place in a cool, dry place for storage. 50-70 degrees is optimal.
    21. If any jars did not seal, place them in the refrigerator for enjoying now!
    22. Enjoy your Homemade Roasted Tomato Soup!

  • At the time of serving, you can add:
  1. Milk, Half & Half or Heavy Cream to create a Tomato Bisque
  2. Chicken or Vegetable Stock to thin out the Soup & stretch to feed more people
