Raisin Bran Cereal Muffin Recipe
Raisin Bran Cereal Muffins - easy muffin recipe using cereal from the pantry to add some great bran flavor.
Ingredients
Raisin Bran Cereal Ingredients
- 6 Cups Raisin Bran Cereal
- 2 1/2 Cups Milk
Dry Ingredients
- 3 Cups Flour
- 1 Cup Sugar
- 2 Tbl Baking Powder
- 1 tsp Salt
Wet Ingredients
- 2 Eggs
- 1/2 Cup Neutral Oil (Avocado, Vegetable or Canola Oil work well)
Optional Toppings
- 2 Tbl Sugar
- 1 tsp Cinnamon
Instructions
- Pour Raisin Bran Cereal Ingredients (Raisin Bran Cereal & Milk) into a mixing bowl and set aside to allow the milk to soak & soften the cereal - about 2 min.
- Combine Dry Ingredients (Flour, Sugar, Baking Powder & Salt) nto a large mixing bowl and Mix until well combined, set aside.
- Beat together the Wet Ingredients (Eggs & Oil) in a small bowl until well combined.
- Pour the prepared Raisin Bran Cereal Ingredients & Wet Ingredients into the Dry Ingredients and Stir until incorporated, to create the Raisin Bran Cereal Muffins Batter.
- Scoop the Raisin Bran Cereal Muffins Batter into a Muffin Pan. (Silicone Muffin Pans work well!) (see Notes below*)
- Sprinkle Optional Topping (Sugar & Cinnamon combined in a small dish to create a cinnamon sugar mixture) evenly over each Muffin if desired.
- Bake the Raisin Bran Cereal Muffins at 400 Degrees for 15-20 min or until a Toothpick comes out with a few crumbs on it.
- Cool the Raisin Bran Cereal Muffins, in the muffin pan, for 10 min. Then remove the Muffins from the pan and cool directly on a Cooling Rack 5 min.
- Enjoy!
Notes
- Place Silicone Muffin Pans over a Baking Pan or Cookie Sheet to help give structure & support for placing in oven, while baking & when removing from oven.
- These Raisin Bran Cereal Muffins Store (once completely cooled) in an airtight container about a week at room temp and in the refrigerator about 2 weeks.
This recipe is a nice way to use a breakfast cereal item to make a hearty breakfast muffin!
