Maple Pecan Breakfast Granola

Maple Pecan Breakfast Granola Recipe

This Crispy Maple Pecan Flavored Granola would be a yummy addition to your Breakfast, Packed into Lunches or College Care Packages, as well as a nice option to quickly Grab when you're On the Go! Plus, with this being a No Egg Recipe, even if someone has an Egg Allergy or Dietary Restriction, they can still enjoy this Delicious Homemade Granola!

Prep Time 10 minutes
Bake Time (Stirring every 20 min) 50 minutes
Total Time 1 hour

Ingredients

  • 5 Cups Oatmeal (Old-Fashioned)
  • 4 Cups Pecans (Chopped)
  • ½ Cup Flour (All-Purpose)
  • 1 Cup Brown Sugar
  • ½ tsp Salt
  • 1 Cup Maple Syrup
  • ½ Cup Neutral Oil (Avocado, Vegetable or Canola work well)
  • 1 Tbl Vanilla

Instructions

  1. Combine Oatmeal & Pecans in a large Mixing Bowl and Stir until well combined, creating an Oatmeal Mixture.
  2. Pour the Oatmeal Mixture into Parchment Paper Lined Baking Pans, evenly distributing between the pans to create a thin layer of the mixture.
  3. Mix the Flour into the Oatmeal Mixture with your hands in order to coat the Oatmeal & Pecans with Flour.
  4. Now add the Brown Sugar, incorporating it into the Oatmeal Mixture with your hands.
  5. Sprinkle the Salt over the Oatmeal Mixture and slightly stir in with your hands.
  6. Next, Drizzle the Maple Syrup over the Oatmeal Mixture and Stir with a Spatula or Spoon to coat the Oatmeal & Pecans evenly.
  7. Drizzle the Neutral Oil over the Oatmeal Mixture and Stir it into the Oatmeal Mixture as well, coating the Mixture evenly.
  8. Add the Vanilla and Stir in until incorporated into the Breakfast Granola Mixture.
  9. Bake at 300 Degrees for 40-50 min or until Crispy and Golden Brown to your liking (stirring every 20 min until completed).
  10. Allow the Breakfast Granola to cool completely on a Cooling Rack.
  11. Break the Breakfast Granola into the desired size pieces & store in an airtight container.
  12. Enjoy for Breakfast, as a Quick Snack or over some Yogurt with Fruit for a Tasty Parfait!

Notes

- You can mix the Granola as above (in the Baking Pans) or in a Big Mixing Bowl and then pour the Granola into the pans for baking. I like to get my hands in there & mix right in the Baking Pans!

- Breakfast Granola stores nicely in an airtight container at Room Temperature for about 2-4 weeks or in the Freezer for 3-6 Months.
