Mexican Street Corn Salad | Fresh & Flavorful Salad or Side Dish Recipe

Today we will be making a Quick & Easy Salad or Side Dish of Mexican Street Corn Salad! My recipe has a little twist which makes the salad able to stand up to the heat of summer better than the standard recipe. This is a great salad to share at a Potluck, Picnic, BBQ or Cookout. As well as it works nicely as a side to Tacos, Fajitas, Steaks & Pork! What a nice cool salad to enjoy & it only takes a few minutes to put together!

Mexican Street Corn Salad

Mexican Street Corn Salad Recipe

Homemade Mexican Street Corn Salad - what a refreshing addition to any Potluck, Picnic, BBQ or Taco Night!

Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1/4 Cup Sour Cream
  • 1 Cup (8 oz) Queso Fresco, Cotija Cheese or Feta Cheese (Crumbled)
  • Juice of 1 Lime
  • 1 Jalapeno Pepper (diced)
  • 1 Small Shallot (diced)
  • 1/2 Cup Parsley or Cilantro (fresh, minced)
  • 1/2 tsp Chili Powder
  • 1/4 tsp Red Pepper Flakes
  • 1 tsp (@ 2 cloves) Garlic (minced)
  • 1/2 tsp Salt (to taste)
  • 5 Cups Corn (*see Notes below)

Instructions

  1. Combine the Sour Cream, Cheese of Choice & Lime Juice in a bowl and mix well.
  2. Stir in the Jalapeno Pepper, Shallot, Parsley or Cilantro, Chili Powder, Red Pepper Flakes, Garlic & Salt and mix until well combined.
  3. Toss in the Corn and mix until well incorporated into the mixture.
  4. Enjoy with Tacos or other Mexican dishes, as a side dish at potlucks, cookouts or BBQs or even just as a dip with Tortilla Chips!

Notes

For the corn you can use:

  1. Frozen Corn - thawed & drained
  2. Canned Whole Corn - rinsed & drained
  3. Leftover Cooked Corn on the Cob - Cut off the cob
