Tomato Rhubarb Soup (Rhubarb Gazpacho)

Tomato Rhubarb Soup / Tomato Gazpacho Recipe

Delicious Garden-Fresh Soup, such as this Tomato Rhubarb Soup makes a lovely addition to Lunch or Dinner.

Prep Time 10 minutes
Simmer Time 15 minutes
Total Time 25 minutes

Ingredients

  • 2 Cups Rhubarb (chopped)
  • 1 Cup Onion (chopped)
  • 2 tsp (@ 4 cloves) Garlic (minced)
  • 1/2 tsp Paprika
  • 1/2 Cup Combined Fresh Herbs (Basil, Mint, Parsley, Rosemary & Thyme) (washed, de-stemmed & coarsely chopped) (*see Notes below)
  • 1 (29 oz) Can Tomato Sauce (*see Notes below)
  • 3 Cups Chicken Stock / Broth (*see Notes below)
  • 2 Tbs Knorr's Vegetable Dip Mix (or Home Dehydrated/Freeze Dried Veggie Mix)
  • 3 Tbs Sugar
  • Salt to taste

Instructions

  1. Sauté Onions & Rhubarb with a small amount of oil of choice, in a Dutch Oven or Stock Pot until tender.
  2. Add Garlic & continue to Sauté until fragrant.
  3. Stir in Paprika & Herbs.
  4. Pour in Tomato Sauce, Chicken (or Vegetable) Stock / Broth, Veggie Mix & Sugar.
  5. Using an Immersion Blender, blend the Tomato Rhubarb Soup until it is to desired consistency.
  6. Season with Salt to taste.
  7. Bring Tomato Rhubarb Soup to a Simmer & continue to Simmer for 15 min.
  8. Serve Tomato Rhubarb Soup Hot, Warm or Chilled! (*see Notes below)
  9. Optional: Garnish with Fresh Herbs on top.

Notes

    • If using Dried Herbs - 1/2 tsp of each Herb (Basil, Mint, Parsley, Rosemary & Thyme)
    • If using Home Canned Tomato Sauce - 2 Pints or 1 Quart of Tomato Sauce
    • For a Vegetarian Option, use Vegetable Stock / Broth instead of Chicken Stock / Broth
    • A dollop of Sour Cream or Plain Greek Yogurt adds a nice creamy flavor to this Garden-Fresh Soup!
